Our chef, oversees the culinary direction and menus in both the Old Ox Restaurant and Cardinal Lounge, as well as the hotel’s banquet and catering operation. His focus is to promote eco-sustainability through environmentally friendly products, ‘food for thought’ entrees and farm-to-table initiatives. This includes his own garden at the hotel; used to create innovative dishes prepared with only the freshest ingredients.
